Baby Back Ribs

  1. light your charcoal (briquettes).  I use a chimney about 3/4 full.  
  2. prepare the ribs.  peel off the membrane with a paper towel, rub lightly with olive oil and generously with Beans Farm Grilling Dust.  
  3. place lit coals on one side of the Weber Kettle, ribs on the grate above opposite the coals
  4. cover & wait    90 minutes if they are skinny and 2 hours if they are not skinny

You can flip halfway, tear off the end pc to test, sauce at the last 10 minutes if desired.  The beauty of this is the coals will burn out in about 2 hours so if you walked too far away the ribs will be just fine for an extra hour or so.  fine tune the amount of coals if needed next time.
